The 2013 Chablis 1er Cru Vaillons is fermented and aged in 20% used oak barrels. It was showing a bit of reduction on the nose when I tasted it, though that dissipates to reveal a mild-mannered bouquet with light sea-spray influences coming through. The palate is fresh and crisp with well-judged acidity. It is not the most complex Chablis Vaillon of 2014, though there is a degree of elegance and refinement that should not be overlooked on the finish. Enjoy over the next 4 to 6 years.
